He chose to become a chef after receiving compliments for the dishes he served his friends. After graduating from school, he entered the culinary world. During his years of training, he came across "simmered fresh fish" and became committed to dashi (soup stock). He is currently working at Akasaka Ando. Under the motto of "Doing the ordinary work with care," he creates a gentle flavor by carefully carrying out each task one by one.

Delivering new charms of Japanese food based on the skills polished at a famous restaurant-inn.

Mr. Sato was born in 1990 in Chiba. Because of his love of cooking, he aspired to become a professional chef and studied at the international cooking department of Sakura-Higashi High School. After graduating, he studied hard for 8 years at Kagaya in Noto, a leading restaurant and ryokan inn in Japan. His dedicated devotion and careful handiwork have been highly evaluated. He has received many awards in cooking competitions, including being chosen to represent Ishikawa Prefecture in the Japanese Cuisine category at the National Skills Competition and receiving the Ishikawa Prefecture Youth Skill Award. With his motto of making Japanese food more familiar to people, in the fall of 2017, he opened his own restaurant Sato in Jimbocho, Tokyo.

Specializing in sushi for more than 45 years. Mr. Igarashi puts his heart and soul into every single piece of sushi and treats guests with seasonal delicacies.

He was born in 1961 in Hokkaido. The chef of Sushi Miyako. When he was a child, he had many opportunities to hear about the deliciousness of Edo-mae sushi from his father, who had lived in Tokyo, and he aspired to become a sushi chef. After training in Sapporo, he moved to Tokyo and gained experience at a sushi restaurant in a hotel in Kojimachi. Later, he connected with Sushi Miyako in the Hyatt Regency Tokyo in Nishi-Shinjuku, where he has worked for about 30 years. In 2022, he inherited it and established the current restaurant on the basement floor of the Hilton Tokyo in the same area. He is presenting the culmination of his life as a sushi chef.

Having gained experience at a seafood Japanese restaurant, he learned culinary skills and styles that bring out the best of varied ingredients from his hometown. Because of his skills, he was appointed to his current position. He serves authentic Japanese cuisine of local production for local consumption to guests from Japan and abroad who visit Kamakura. He always works with sincerity and hospitality, feeling motivated to connect with people through food and bring joy and pleasure to them.

Mr. Furuya fulfilled his dream of opening his own restaurant by following in his father's footsteps and becoming a sushi chef.

He was born in 1967 in Tokyo. Since his family owned a sushi restaurant, he chose a life as a sushi chef. In 1987, he began his career in earnest at Imayoshi in Otemachi. Subsequently, he worked at Tokyo Green Hotel Korakuen in Suidobashi and Suijinen in Chofu before assuming the role of deputy head chef in the sushi division at Shinjuku Nadaman Hinkan. In 2007, he became the head chef at Grand Hyatt Tokyo Rokuroku. Then, he opened Sushiya Hajime as the owner in 2018.

He entered the industry with the desire to realize his ideal restaurant. The condition of the restaurant at the time was not something quite favorable. As he worked part-time to learn about cooking, his passion for cuisine and ideal restaurant management grew stronger, so he entered the restaurant industry as a full-time employee. Introducing the taste of Yamagata and the fun of Robatayaki.

Mr. Sakai was born in 1978 in Yamagata. After working as a company employee in the Kanto region, he returned to his hometown at 24. Since then, he has been running Ajinosato Bandai with his parents. In 2021, his idea redesigned the Robata (fireside) to its current form. Until then, chefs used to cook sitting down, but he changed to a standing style of grilling to be able to move aggressively. The distance to the guests is closer, giving the restaurant a more "entertaining" robatayaki atmosphere.

Still, he came back to Japan due to the pandemic of COVID-19. He has worked as a general manager of Yakitori Bancho and Tebasaki Bancho for Bancho for 2 years.

Destined for Western cuisine since birth, this chef spares no time or effort in his approach

Born in Fukuoka Prefecture in 1982, Chef Takaki grew up in a family that managed a Western food restaurant where he watched both his parents cook since childhood. He learned by imitation, and naturally his opportunities to help out in the kitchen increased as he grew up. Training at the Western restaurant, he built up his fundamentals as a chef, improving his skills along the way. He now cooks at Italian restaurant Firenze Kita-Kyushu, putting his whole heart into every dish, operating on the ideal of sparing no effort to make food that has soul.

Mr. Kawanishi was born in 1983 in Hokkaido. He enjoyed using the crops he grew in his vegetable garden for cooking. At the age of 20, he entered the culinary world. He worked as a bartender in an authentic bar for 2 years, in a Belgian beer restaurant as hall and kitchen staff for 2 years, in a buffet restaurant for 2 years, in a beer bar as a chef for 1.5 years, and in a steak house and Italian restaurant as a chef for 10 years. He then joined his current company and works as the head chef at es craft.

Aiming to create cuisine that is also pleasing to the eye, he carefully prepares each dish as a work of art with sincerity and care.
